Creamy leeks and vegetables with salmon

It’s been a tomato celebration lately, getting carried away with the tomato based baby recipes.  Quite honestly I need a break from the mess, I can’t handle another orange stained outfit, and there seems to be an oompa loompa sitting in the high chair of late with a perma orange face!  At least he appreciates my cooking.

I am taking a different direction today, after mentioning to a friend how to make a butter-less roux I thought about creating a healthy creamy dinner for his highness.

Salmon too is great for the whole family, full of omega-3 fatty acids, it raises your good cholesterol, lowers your blood pressure, gives mummy nice shiny hair and bright eyes, turns your kid into a genius by helping brain and memory function…need I go on.  Vitamins A,  B’s and D, selenium, folate, iron, calcium…somebody stop me.

Herby Salmon

This recipe made two meals for my little guy, you can scale it up or down for the family, and use whatever vegetables you have in the fridge, the creamy sauce can be adapted to go with anything, this happens to be what I had at home!

1 salmon fillet
1/2 cleaned and sliced leek
1/2 diced carrot
1/2 diced parsnip
1/2 cup broccoli florets
2 heaped tsp of plain flour
1/2 cup milk or water
lots of dried herbs, thyme, basil, oregano, parsley

Drizzle a little olive oil over the salmon and sprinkle liberally with whatever dried herbs you happen to have.  Bake on foil for 20-25 minutes at 180C.

Drop all of the vegetables into boiling water and simmer until tender or until your sauce is ready.

Add a generous tablespoon of olive oil to a saucepan and gently soften the leeks without burning.

After a couple of minutes add two heaped teaspoons of flower to the leeks and cook on low for three minutes stirring continually.

Add the milk or water and keep stirring until the sauce starts to thicken then stir in lots of black pepper and a generous teaspoon of mixed herbs.  Add more liquid if sauce seems too thick.

Drain the vegetables and stir into the sauce, then flake the salmon checking for any stray bones and mix the fish in too.
